My Step-By-Step Fermentation Method

  • 6–8 large firm, under-ripe beefsteak tomatoes
  • 3 liters filtered water (room temperature)
  • 3 tablespoons sugar (1 tbsp per liter)
  • 6 tablespoons sea salt (2 tbsp per liter)
  • 1 head garlic, peeled and halved
  • Several stalks celery, chopped
  • A bunch of fresh dill
  • 1 tablespoon black peppercorns
  • 1 tablespoon coriander seeds
  • 1 tablespoon dill seed
  • 1–2 bay leaves (optional)
  • 1 teaspoon dry mustard powder
  • Cheesecloth and rubber band for covering the jar

Instructions:

  1. Thoroughly wash tomatoes with a baking soda and vinegar rinse, then rinse well.
  2. Layer garlic, celery, and dill at the bottom of a clean, wide-mouth jar.
  3. Pack tomatoes in layers, alternating with more garlic, celery, and dill.
  4. Evenly distribute the spices throughout the layers.
  5. Dissolve sugar and salt into filtered water to create the brine.
  6. Pour the brine over the tomatoes until fully submerged.
  7. Cover the surface of the brine with cheesecloth and sprinkle mustard powder on top to prevent mold.
  8. Cover loosely and store the jar in a dark, cool spot (such as a cabinet or pantry) for 4 to 6 days.
  9. When the brine turns cloudy and aromatic, transfer the jar to the refrigerator to ferment further.
  10. Refrigerated fermented tomatoes develop richer flavor depth and can last over a year.
